These delicious Wee bars are packed with banana, dried fruit & nuts, quinoa, oats, hemp & chia seeds, and also CBD. A great Wee breakfast for those on the go or a tasty Wee snack to help you fuel up quickly! Better yet, they're also gluten free :)

Hello there, I'm Rebecca and welcome to my 1st Wee recipe share, I really hope you enjoy it and you find some inspiration from the recipe below.


Having to be very careful in what I eat, has forced me down an incredible path of culinary discovery, and one less walked than most. With many gluten free products (including flour mixes) on the market containing maize, there really isn't much out there for someone with the types of intolerances I have. And I'd like to start sharing these recipes and tips with you.

With an arms length list of intolerances (wheat, gluten, maize, almonds, oats, egg yolk, gelatine, cranberries.... just to name a few), a couple of chronic health conditions and a body that will now only accept anything entering it to be as natural as possible, everything Wee consume is made from scratch.

 Yes it takes time, but I've adopted cooking as part of a mindful practice, and the reward of not living in pain, breaking out in itchy rashes or spots everyday has really been worth it. Besides homemade food tastes way better too, and importantly you know where it's come from and what's in it. This lifestyle has been the case since my Fibromyalgia diagnosis in late 2016 and my husband follows it too (well apart from he has gluten free oats).


So what inspired me to make this recipe was the fact that Wee had a bunch of very ripe bananas waiting to be used (some are earmarked for our bi-weekly treat... gluten free, maize free, yolk free Chocolate Banana Bread, recipe coming soon), and Calum had mentioned he has been struggling in the mornings to eat breakfast, which is normally GF porridge. I think many people will find this a bit heavy on the stomach for the warmer months.

I then went hunting for a basic recipe or two that I could add my own spin too (I really struggle to stick to a recipe and always tweak it, I sometimes take inspiration from several recipes to form my own unique version, I just can't help myself).

With all the above said, please use this recipe as a template and feel free to add a Wee spin of your own to it, after all that's what makes cooking fun... letting that inner creative child run wild and free :)


And remember, to always lick the spoon or bowl at the end, it's the best part!

WEE RECIPE

CBD INFUSED- HEMP, CHIA, QUINOA & BANANA PROTEIN GRANOLA BARS

WEE INGREDIENTS
  • 1 cup gluten free rolled oats
  • 1/2 cup uncooked pre-rinsed quinoa
  • 2 tablespoons chia seeds
  • 1 1/2 tablespoons hemp seeds 
  • 1/4 teaspoon maldon sea salt
  • 3/4 teaspoon sweet cinnamon
  • 2-3 ripe bananas, mashed 
  • 1/2 teaspoon vanilla extract
  • 1/4 cup roughly chopped walnuts & cashew nuts
  • 1/4 cup chopped pecans
  • 1/3 cup dried fruit (raisins, dried mango etc works well)
  • 1/4 cup peanut butter (or any nut butter) 
  • 2 tablespoons honey (or pure maple syrup)
  • 10 drops of CBD (optional)
WEE INSTRUCTIONS
Step One:
Preheat oven to 180°C (reduce heat for fan oven). Line an 8x8 inch baking tin with parchment paper to prevent the bars from sticking. 

Step Two:
In a large bowl, combine the; oats, uncooked quinoa, chia seeds, hemp seeds, salt, cinnamon and CBD drops. Stir in the mashed banana and vanilla. Fold in the chopped nuts and dried fruit.

Step Three:
Place a small saucepan over a low heat, add in the peanut butter (or other nut butter) and honey (or maple syrup). Stir until warm and the nut butter has melted. Fold into granola bar mixture until well combined. 

Step Four:
Pour into prepared tin and press down firmly with the back of a spoon or spatula to help the bars stay intact. Bake for 25 minutes or until edges turn golden brown. 

Step Five:
Allow to cool completely (on a rack if you have one) before cutting into 10 bars.
WEE RECIPE NOTES
Let the creative juices flow... feel free to switch up the dried fruits and/or nuts too whatever is available to you or to your preference.  

These Wee bars can be stored at room temperature for a few days, however they are best kept tightly wrapped in the fridge or freezer. 

Also, feel free to adjust the CBD Drops quantity to reflect the dose you wish each slice to contain. Wee have used 10 drops of our 10% Broad Spectrum CBD, so each slice contains 1 drop of CBD (circa 5mg of CBD in each slice).

The end result got the thumbs up from Calum, phew! So yummy in fact, that even Mylo wanted to get involved in eating them, hahaha! Unfortunately for her, Calum doesn't share my baked treats!

    Hi i am loving the new recipes , i have several intolerances to certain foods mainly dairy and peanuts which cause havoc with my digestion so i will love trying these bars for breakfast. thanks for the inspiration x
